I love a good stuffed pepper and they are a great quick and easy filling meal. However they are usually stuffed using rice or couscous. Which is fine on an Extra easy day buy needed to find an SP alternative that still had the same filling power. Trust me these did not disappoint. Speed filled, quick to make and absolutely delish. Enjoy xoxo

Steps

1
Done

I just start by finely chopping up my onion, mushrooms (not essential) and my 250g of 5% lean mince. I then fry it in a pan with a bit of fry light.

2
Done

Once the mince has browned I drain off any of the extra fat, every little helps :-) I then just tip in 1/2 a tin of chopped tomatoes along with 50ml of boiling water.

3
Done

Next it's seasoning time. I add in a beef stock cube. I then add garlic powder, to your taste preference, some oregano and then either some fresh chopped basil or just dried basil

4
Done

Next stir in 2-3 tbsp of tomato puree and a few liberal splashes of Lea and Perrins sauce. Allow the lot to simmer for about 10mins

5
Done

I then just halve my 3 peppers and de-seeded them. Next I just spoon in my bolognese mix and top it with my grated cheese. Then I just pop them in the oven on 180° for roughly 25mins.

To date I have lost over 11 stone and am currently right were I want to be. I love experimenting with food and finding new ways to use different things. I'm a throw it in kind of chef but thought I'd share a few of my ideas and/or recipes. As well as a few piccies, I mean who doesn't like pictures of food, right?! XoXo
