Cauliflower Flat Bread

So we all know anything bready is going to hold a very high syn value 🙁  So I was on the search for a good alternative after a few different failed attempts at bread substitutes, I came across a few slightly different recipes for these little beauties. So versatile, there is so many ways these could be used. Burger buns, pizza bases, as muffins on a cooked breakfast. The possibilities are endless.

To make these I just used 1/2 a head of a large cauliflower which I chopped up and put into my food processor. I then used the pulse button roughly 20-25 times, or until the cauliflower resembles a cous cous like grain.

Next I tipped it all into a mixing bowl and added 2tsp of mixed herbs, 2tsp of garlic powder and some white pepper. Then I just cracked in 2 eggs and mixed the whole lot together.

Next I just spooned the mix onto a baking tray lined with a baking sheet, I always use silicon as I find this the best to stop any sticking (see link at the top of the post). I used the spoon to form round flat pattie shapes, I made roughly 5 or 6 out of the mix.

I Then just popped them in the oven on 180° (Fan oven) for 15 mins before I took them out and flipped them. I then gabe them a wee spray with frylight and popped them back in for another 15 mins. These can then be left to cool and stored in an airtight container in your fridge or eaten right away. I've had them both hot and cold and they were equally as nice. Hope you enjoy xoxo
