I started by separating 3 eggs and whisking the whites until stiff. |

Then in another bowl I mixed my yolks with 10g of cocoa, a teaspoon of baking powder, 4tbsp of sweetener and half a tub of quark. I then added half of egg white to the mixture and whisk some more. Then folded in the rest of the egg white |

Next I poured the mixture into a lined tin and popped it in the oven on 180° for roughly 20 minutes. |

I then allowed the cake to cool before mixing the other half of quark with 1tbsp of sweetener and spread it on to the cake and lay on my fruit. I then carefully rolled the roulade making sure to not break it. The recipe would probably make enough for a few servings or, if your like me, one serving :-) Enjoy xoxo |
