Creamy Cheese and Spinach Sauce

So here's a super fast and super versatile sauce idea for you. Literally ready in minutes. Added bonus it's syn free and full of speed food.

I used some of the sauce to stir through pasta for my dinner but it has so many uses.

Can be used in cannelloni, a lasagne, a pasta bake etc. My recipe for this has made enough to be able  fill a jar even after the big portion I had for my dinner 🙂

Just put 1/2 a bag of frozen spinach into a microwavable bowl along with garlic flakes or powder (to your tastes) . Pop it all into the microwave for roughly 5min. Take it out and stir/break up the frozen spinach and then pop it back in to the microwave for a few more minutes.

Spoon all your garlic spinach in to a blender along with a large dash of milk and 4tbsp of fat free cottage cheese. I also threw in a chicken stock cube along with a handful of fresh parsley and then blitzed the lot down. I used some of the sauce to stir through pasta for my dinner but it has so many uses.
