2 Weetabix
2 Eggs
1 Carrot
5tbsp Sweetner
Lemon Flavouring
dash Milk

Lemon and Poppyseed Muffins

So if your anything like me I'm a sucker for a muffin from time to time so thought I'd give a go at making a healthier version of one of my faves, lemon and poppyseed :-)

Put weetabix into a blender and blitz down to a fine powder. Next add the other ingredients bar the poppyseeds and blitz it all down.

Pour mix into bowl, add your poppyseeds and fold well to get in as much air as you can.

Next seperate into your cupcake cases and cook for 20 mins on 180°. Allow to cool. They are quick, easy, healthy and to top it off They taste delish :-) Also a fab way to get some goodies into your little ones while they think they are just eating cake. Enjoy xoxo
