As a cakeaholic I’m always looking for or trying to think up new recipe ideas for SW friendly cakes. One of my all time faves is a good old lemon drizzle. So I had a little play around with a few recipes.
These work out as 1/2syn each and would also be great healthier alternative for the kiddies. Low fat and sugar free what more can you ask for.
I found they did stick to the paper cases slightly so would advise using silicon cases. Here is a link to the ones I use.

First of all, preheat the oven at 180ºc. Then separate 3 eggs and whisk the egg whites until they form soft peaks. |

In a separate bowl finely grate in the zest of one lemon and mix in your egg yolks, 30g of sweetener, 1/2 a lemons juice and 35g of self raising flour. Mix it until it is all combined well. The mixture can get quite tough so keep adding bits of the egg white until it becomes smoother and easier to whisk. |

Next, gently fold in the rest of the egg whites, pour into a lined tin or muffin cases (mix will need to make 12 to be 1/2 a syn). Then bake for about 15 minutes |

While they are in the oven juice the other 1/2 of your lemon and mix with 15g of sweetener. After the 15mins evenly apply your drizzle to your 12 cakes and pop them back in the oven for 5 mins. Enjoy xoxo |
