So as I’m sure you are all aware I’m a super cake or biscuit lover so the thought of having my HExB to play with makes a massive difference. Because of this I decided I needed to find a quick brekkie, like this is,  that’s still super filling as well.

I just started by cooking my cubed potatoes by popping them in the microwave for roughly 7 mins. While that was cooking I just chopped up my onions, baby tomatoes and the ham.

I than chucked the lot into a pan and browned it off. Next I beat one of my eggs, adding in my seasoning to it, I then just poured over the potatoes, onions, ham etc. I then cracked my other egg over the top. just finished it under the grill for a wee while just to cook the top off a bit.
