Ingredients

2 Onion
2 Carrot finely grated
1 Chopped Toms (Tin)
1 Baked Beans (Tin)
150-200g Veggie Mince
2tbsp Cumin
2tbsp Dried Garlic Flakes or Garlic powder 2tsp
1 Vegetable oxo cube
1tbsp Tomato Puree
Chilli Powder (hot)

Vegetarian Chilli Con Carne

So just a really quick easy great family fave. I've added in extra grated carrot to bulk it up further and get in some more veggies

Start by finely chopping 2 onions and browning them off in a pan. Then added 2 finely grated carrots a tin of chopped tomatoes and a tin of baked beans, you could use kidney beans instead of that's your preference. If you use kidney beans you will probably need to add additional liquid.

Next just chuck in about 150-200g of veggie mince. I chuck it in frozen as it just defrosts while cooking. Then add about 2tbsp of cumin, 2tbsp of dried garlic flakes (powdered garlic (2tsp) would also be fine), a veggie oxo cube, 1tbsp of tomato puree and hot chilli powder to taste.

Allow to simmer for about 10mins and your done. I served mine with mixed veg and rice and topped it with 0% fat Greek yogurt and some jalapenos. It would also work great on chips or wedges. Enjoy xoxo
