2 Eggs
2 Carrot small finely grated carrots
4-5tbsp Sweetner
2tsp Cinnamon
smidge Nutmeg
smidge Ginger
dash Milk

I’m not going to lie I’m rather partial to a good slice of carrot cakes but just a wee slice can really knock up your syn count. So naturally the playing around to create a healthy alternative began. Low fat and sugar free, what more can you ask for in a cake… Oh yeah they taste great! These also have the added little bonus of containing some speed food as well 😀

They are great as they are but for a little extra something I made a topping to put on mine. I mixed quark with a little sweetener and a splash of lemon juice and topped the cakes with it. Enjoy! Xoxo

Start by putting your weetabix, sweetener and spices into a blender and blitz down to a fine powder

Next you will need to separate your eggs. Whisk the egg whites until they form soft peaks

You will then need to add half your grated carrot, your egg yolks and your milk into the blender and blitz it all down

Add your mix along with your remaining grated carrot into your egg whites and try to gently fold it in until it is well mixed. Then you can just spoon it into your cupcake cases and cook for 20-25mins on 180°. Once cooked allow your cakes to cool.

2 eggs, sorry about that i have recently changed the website for emily and needed to rewrite everything so sorry for missing that out. all updated now.

I’ve tried to make this twice now. First time they were raw still so I thought cut down milk and use paper muffin cases instead of the silicon ones. Second batch still raw after half an hour

Yes Sweet, its 6 syns for the 2 weetabix if you are not using your healthy extra B, if you do use your healthy extra on these cakes then it will be syn free xx

Hi all I made these and I had the same happen to me as Joanne they were still raw after half hour put them back for another 20 mins and still raw what gas mark do you need these on for them to turn out and how long please

Made these today and were still raw, so don’t know what I did wrong, very disappointed as was so looking forward to them
