300ml Unsweetened Almond milk

75g Rice(arboria is best but I actually just used ordinary long grain)

4tbsp Sweetner

1tsp Vanilla Extract

Rinse the rice under running water until the water runs clear. |

Add rice, sweetener, vanilla extract and almond milk into a medium pan and bring to a boil. Then just reduce the heat to low, cover, and simmer for about 15 minutes, stirring occasionally to make sure the rice does not stick to the bottom of the pan |

Uncover the pan, and continue to simmer for another 10 minutes, stirring the rice occasionally. The mixture will start out very watery, but the rice will slowly absorb all the liquid until it is thick and creamy. |

Then re-cover and let rest for about 5 minutes before serving. |
