Diet Coke Chicken

So this is quite a well known one in the SW foody circuit but thought I'd share it with you all.

So this is quite a well known one in the SW foody circuit but thought I’d share it with you all. I was skeptical at first. The thought of using a can of fizzy drink in a meal just seemed a wee bit mental. I can honestly say I’m a diet coke chicken convert. Not only that but the whole family love it.

Start by chopping your chicken breast, onions. I keep my onions quite chunky. Chuck the lot into a large frying pan and fry it off with frylight.

Next, into a Pyrex jug, add your diet coke, passata, a few glugs of Lea 'n' Perrins and about a tsp of garlic powder and a bit of pepper. Stir the lot together and add to your chicken and onions and bring to the boil.

Then just reduce the heat to medium-low and simmer for about 15 minutes or until the sauce reduces. I served mine with rice but it also goes great with SW chips. Hope you enjoy xoxo
