I just chopped 3 onions and 2 chicken breast (can do more depending on how many cooking for) and fried them off in a pan. I then added a tin of chopped tomatoes, 150ml of water, garlic powder, chilli powder and a bit of basil. |

I brought it to the boil and added my rice. I then just let the lot simmer, stiring occasionally until the rice was cooked. Might need to add a bit more water half way (if worried about it getting to diluted add a tablespoon of tomato puree) I then turned off the heat and allowed it to rest for a few minutes and stired through my fresh spinach.
