I’m not going to lie I’m rather partial to a good slice of cake and a cake that’s can have for brekkie… Even better 🙂 The only problem is just a wee slice can really knock up your syn count. So naturally Finding something low syn and quick and easy had to be done. Low fat and sugar free, what more can you ask for in a cake… Oh yeah to contain speed food and taste great as well! These also have the added bonus of no oven time. Always a plus around breakfast time.

I sliced mine in half and filled with some fresh raspberries (a wee bit extra speed) and an extra drizzle of salted caramel syrup. However you could make a sweetened quark filling. Delish. Hope you enjoy! Xoxo

I just started by finely grating my courgette. Next I just chucked all the ingredients in to a bowl and gave them a darn good mix. Then I just poured the mix into a silicon loaf tray (see link above), although a silicon cake tray would work fine to.

I then popped it in the microwave on full power for about 6-8 minutes. Then it was just cooling time. I went off bathed the boys while it cooked, good old mum life. Once it's cooled your good to go
