You could use Quorn Bacon or Ham to make this vegetarian

I just start by frying off, in fry light, my sliced bacon and onions for a few minutes. Next I add the mushrooms and continue to cook for roughly another 4-5 minutes then set them aside to cool slightly |

Next I just switch my oven on to preheat at 190°C/170°C Fan/Gas 5. |

Next I thoroughly mix the eggs, cottage cheese, parsley and a wee bit of salt and pepper in a bowl and ppur it all over the top. Then I just pop on my tomato halves and sprinkle on my cheese. I then put it in the oven for about 20-25mins until its set and the cheese has gone golden. Enjoy xoxo |
