Sweet Cinnamon and Apple Coucous

Something a bit different to try for brekkie. Especially nice in the warmer months when porridge might just seem a bit heavy but you want something with a bit more substance than just cereal. Would have been great as well with a handful of raisins chucked in!

I just finely grated a medium carrot in a bowl with some uncooked couscous. Chucked in some cinnamon and about 5tbsp of sweetener. I then poured over my boiling water and stirred altogether, covered it and left to stand until the coucous had cooked and swelled.

I then just added in my grated apple stirred it through added more sweetener if needed and topped with an extra sprinkle of cinnamon. So simple and quick to make! Enjoy xoxo
