White Sauce
500g 0% Greek Yoghurt
2 Eggs
1tsp Nutmeg
White Pepper
Vegetable Suace
1 Aubergine
2 Courgettes
1 Chopped Toms (Tin)
2 Onion finely chopped
2tbsp Tomato Puree
Garlic Powder
Oregano
few Splashes Worcester Sauce
Lasagne sheets
120g Grated Cheese (portioned for 4 is your HExA 30g)

Syn free using HExA for 30g of cheese

120g of grated cheese (portioned for 4 is your HExA 30g)

So I’ve been on the search for a SW friendly way to make a white sauce. I tried a cottage cheese version with not much success. I then came across a yoghurt version so thought I’d give it a whirl. It totally gets the thumbs up from me. Best syn free ‘white sauce’ I’ve come across for sure.
I’m also going to share how I made my vegetable lasagne serves 4 very comfortably.

I started by chopping my aubergine, courgettes and onions and fried them off until they had softened. I then added my tin of chopped tomatoes, tomato puree, Worcester sauce and seasoning to taste. I then allowed this to simmer for around 15 mins.

While that's simmering away I just mixed together my white sauce ingredients

I then just layered my lasagne and added my grated cheese. I then just popped it in the oven for about 30 minutes on 180° (fan oven)
