So who doesn’t like a little evening of syn free biccie munching?! Not me for sure. Can’t beat a good cuppa tea and biscuits in my opinion. So I set about having a play around with a few experiments. I love the oaty biscuits using my HExB allowance of porridge but fancied trying to make something a bit more ‘biscuity’. I love Weetabix muffins so thought a variation on this could do the trick. Cue Weetabix biscuits! Syn free using your HExB for your 2 weetabix.

Want chocolate biscuits??? instead of cinnamon use 10grams of coca powder(2syns) Ginger is also popular

Start by blitzing your weetabix into a fine powder next add 5tbsp of sweetener and 3tsp of cinnamon (you can add more or less depending on your tastes). I then just pulsed the blender 2-3 times to evenly mix the 3. |

Pour your powder in to a mixing bowl and add an egg and 90mls of milk and mix the lot together. Next just spoon the mixture on to a baking tray lined with a silicone sheet. Greaseproof paper would also work but I find silicone a lot better to stop things sticking. |

I managed to make roughly 7 or 8 decent sized biccies out of the mix. Then just pop them in the oven on 180° for 10 mins then I flip them over and out them back in for another 5-10mins. Allow to cool and your good to go. |
