As a mum life can get pretty hectic so a meal I can put on in the morning and come home to after work and school runs sounds amazeballs. If your anything like me sometimes you just can’t beat a good curry. I’ve looked at a few recipes and just the sheer number of ingredients puts me off instantly. I like something simple, quick and easy. So that is what I have tried to come up with.

Steps

1
Done

I just start by browning off my chopped chicken breasts and onions. You do not need to Cook the chicken all the way through as it will cook in the sauce. I just seal mine.

2
Done

Once that's done I chuck it in my slow cooker along with the made up stock, chopped tomatoes and tomato puree. I then add my Tikka curry powder. I don’t measure, but I'm pretty liberal with it :-) I like a good hot curry so next I add in my curry powder along with the garlic and Tumeric. the hot one, you can use medium if you prefer it less spicy.

3
Done

I then just give it a good stir, whack on the lid and put it on a medium heat until I'm ready to eat it in the evening. Just before serving I stir through my 3-4tbsp of fat free yoghurt and I'm good to go. Hope you enjoy xoxo

Hello! So just a wee bit about myself! I'm Emily mother of 2 beautiful little men and partner to my 30 year old man child, haha. I'm a massive foody, Slimming world member and a former fatty! To date I have lost over 11 stone and am currently right were I want to be. I love experimenting with food and finding new ways to use different things. I'm a throw it in kind of chef but thought I'd share a few of my ideas and/or recipes. As well as a few piccies, I mean who doesn't like pictures of food, right?! XoXo
